personal selection of bourbon is on its way to Daniel's Broiler, expected to
arrive in time for the holidays. A tasting was conducted from samples taken
from barrels resting for the past nine years at one of the oldest distilleries, Heaven
Hills Distillery. Located in Bardstown, KY lies over 700,000 barrels of bourbon
whiskey, waiting to be bottled into Elijah Craig, Evan Williams and Berheim
whiskey. <o:p></o:p></span></div>

two barrels selected are from seven barrel samples of bourbon from the
Evan Williams Single barrel selection. The only vintage dated single barrel
Bourbon and five time "Whiskey of the Year" award winner. These are
shining examples of the process perfected by sixth and seventh generation
Master Distillers Parker and Craig Beam.<o:p></o:p></span></div>

barrel selection is the seventh and eighth barrels selected in the past two
years. These are featured in our house Manhattans and are available on their
own for your tasting. Always different than their commercially sold bourbon, these selections have different characters of their own including, more vanilla,
orange and spice that come out in the flavors. We are expecting to have 150
bottles of each barrel delivered in the first week in December 2012. These bottles
will carry the Evan Williams Single barrel label, with the Daniel's Broiler name
on the bottle, but they will only be available for about three months. After that,
we will be onto the next selection, Buffalo Trace. Samples are on their way
also, and the process will begin again. We will continue to find some of the
best barrels of bourbon that we are able to purchase, bottle and bring to you!</span></div>

We met with Brown-Foreman’s Master Distiller, Chris Morris, and toured the facility and the rick houses. We learned of the history of bourbon making and heritage of Kentucky’s traditions, which was a memorable experience. We saw the limestone and the spring water that the Old Oscar Pepper Distillery used in 1838 and is still being used today by Woodford Reserve.
Labrot and Graham bought the distillery in 1878 and sold in 1940 to Brown-Forman, which produces Woodford today.

We tasted eight samples from eight barrels at barrel strength and came up with a combination of two barrels for our first Personal Selection. Two barrels needed to be combined due to the “angel’s share” that is lost during the years of aging. Woodford also uses heated rick houses that adds to more rapid aging. After lunch the process continued until another combination was selected for our Personal Selection Barrel Two.

<b>Barrel One</b> has a very aromatic nose at first smell, oranges, candied fruit, cinnamon and honey all pop out. The taste is sweet, oaky, and raisins come through at the end. This will be the first selection to be used as the signature Manhattan.
<b>Barrel Two</b> has less of a nose, but a smooth taste of spice, maple and oak. This one is totally different than the first and will available as the year progresses.

This is the first event of its kind in the Seattle area, billed as the largest collection of Bourbon and Rye whiskey, west of Kentucky. Celebrating the founders of the whiskey industry and the birthday of Pappy Van Winkle. There will be over 75 whiskies to sample, a commemorative tasting glass and tasting guide for each paid guest. The cocktail mellows in the barrel and makes for a fabulous cocktail with a corny, sweet bitterness. A barrel aged pure Maple Syrup is part of the Woodland cocktail, along with Woodford Reserve. Jim Beam’s new Devil’s Cut, the opposite of Angel’s Share, which is a process of shaking every last drop from the whiskey barrel is used in Cowboy cocktail, which has a smooth vanilla finish.<br />

We love bourbon so much that we bought a barrel. The unveiling of and first public tasting of the Daniel’s Broiler Personal Selection Bourbon will be on Sept. 14th at the Fine Spirits dinner. Five samples were sent to us from five different barrels, we tasted the samples and found one to be superior to the rest. That one barrel will supply the Daniel’s Broiler restaurants with close to 200 bottles of bourbon. The bottling process will start soon and within weeks it should all be here, ready to be used in the creation of cocktails and our House Manhattan. This bourbon also can be enjoyed neat, one ice cube please.<br />

Now that the weather has changed and summer is finally here, so are some thirst quenching cocktails at the Daniel’s Broiler locations.<br />

Some of the Seasonal libations include fresh ingredients such as basil, mint, cucumber muddled with lime, ginger and lemonade.<br />

The Eastsider is made with Hendrick’s gin, lime, housemade falernum and muddled cucumbers. The summer hit is the Pearly Visible, a mixture of Grey Goose Le Poire, St. Germain, grapefruit and housemade lime cordial. <br />

Or maybe try the Soother, brandy, lemon juice, housemade apple cider syrup and Gran Marnier will cool you down in the summer heat.<br />

This special bottling commemorates the historic birth of tequila production and the establishment of 10 generations of Cuervo family tradition: on November 2, 1758 King Carlos of Spain granted Don Jose Antonio de Cuervo the first plot of land on which to cultivate agave.<br /><br />In anticipation of the 250th anniversary, expert Jose Cuervo <a href="http://en.wikipedia.org/wiki/Jimador">jimadores</a> planted blue agave on the same land granted in 1758 and used these estate-grown plants exclusively in the production of Jose Cuervo 250 Aniversario. This precision was utilized to ensure every decanter maintains a direct link to this historic event and pays tribute to the centuries of labor and family passion that led to the creation of an industry.<br /><br />Jose Cuervo 250 Aniversario is a 100 percent blue agave Extra Añejo Tequila blended from the most select tequilas in the family's reserve and aged in a unique double-cask method. The best of these Extra Añejos, aged in toasted new American Oak barrels for a minimum of three years, were selected by the master distiller and blended together to achieve a superior tequila. The distinctive blend was then finished for 10 months in Sherry casks originating from Spain. The decanter was inspired by the original glass bottle first used by Jose Cuervo to ship tequila to towns throughout Mexico. Each comes packaged in elegant oak gift box and will have its sequential number etched into the glass, certifying the product's rarity and authenticity.<br /><br />We'll be tasting many other fine tequilas as well. We use so much that we were paid a visit at Daniel’s Lake Union by Carolus Nolet, the son of the chairman of Ketel One, when he was in Seattle Friday, March 11, 2011.<br /><br />The makers of Ketel One have a long history at the Nolet Distillery in Schiedam, Netherlands. Their business has been in operation since 1691. Eleven generations of the Nolet family have been in charge of this operation. Ketel One is named after the original copper pot still, ”Distilleerketel #1,” which is still in operation today. Ketel One Vodka is handcrafted in small batches and filtered through loose charcoal. It then rests in tile-lined tanks until ready for bottling.<br /><br />In 1902 the Nolet family opened a distillery in Maryland, but closed and withdrew from the US market during prohibition. 1983 brought Ketel One Vodka to the United States, produced with the recipes and techniques perfected by the Nolet ancestors. Quite a few of the new cocktails are vodka- or gin-based, married with citrus and herbs, and they'll make you wish summer was here.<br /><br />The <span style="font-style: italic;">Sazerac </span>cocktail — featured as one of our vintage cocktails — dates back to the later part of the 19th century. It's a simple cocktail of Rye whiskey, sugar, water and bitters.<br /><br />The <span style="font-style: italic;">Sazerac </span>is the first cocktail ever made. The exact description of the word "cocktail" is: spirit, water, bitters and sugar. Our variation is created with <a href="http://whistlepigwhiskey.com/home.php" target="new">Whistle Pig Rye</a>, from Vermont, which recently came on the market. It's a 100 proof 100% rye aged for at least 10 years in American oak. This whiskey is a creation of Dave Pickerell, who was the Master distiller at Maker's Mark for 14 years. We also use our housemade bitters instead of the original recipe's call for Peychauds Bitters.<br /><br />Along with the <span style="font-style: italic;">Sazerac </span>is the <span style="font-style: italic;">Park Avenue</span>, the <span style="font-style: italic;">Mikado</span>, and <span style="font-style: italic;">Scofflaw</span>. On the seasonal cocktail side of the menu are drinks that include the <span style="font-style: italic;">Applewood Manhattan</span> made with bourbon, apple cider, port and bitters. A <span style="font-style: italic;">Pineapple Cosmo</span> made with a new vodka (<a href="http://www.moonmountainvodka.com/" target="new">Moon Mountain</a>), plus <a href="http://www.stgermain.fr/" target="new">St. Germain</a>, pineapple and lime. While Chef Mike puts the final touches on the menu, we can discuss the rum.<br /><br />Our guest speakers for the evening will include Rocky Yeh, an importer of a wide variety of rums, and Dragos Axinte, Proprietario of <a href="http://www.novofogo.com/Home.aspx" target="new">Novo Fogo Cachaca</a>. He produces two wonderful, 100% organic <a href="http://en.wikipedia.org/wiki/Cacha%C3%A7a" target="new">cachacas</a> from the Southern Brazil Atlantic rainforest. These two cachacas are distilled in small batches from copper pot stills. The entire operation is a zero-waste distillery and recycles everything, including the glass for the bottles. Heck, they even run their cars on the distillate!<br /><br />Rocky Yeh will discuss a few rums such as <a href="http://www.examiner.com/rum-in-national/dos-maderas-px-aged-rum-from-the-caribbean" target="new">Dos Maderas</a> rum, distilled and initially aged in Barbados and Guyana and then shipped to the bodegas of Williams and Humbert's in Spain. This mahogany-hued rhum is soft and has semi-sweet aromas with tastes of chocolate, figs and amaretto. The <a href="http://www.slashfood.com/2006/12/16/liqueur-notes-rhum-clement-creole-shrubb-curacao-orange-liqueur/" target="new">Creole Shrubb</a> will also be part of our dinner experience, a orange liqueur made from rhum.<br /><br />If that's not enough, we'll also taste <a href="http://en.wikipedia.org/wiki/Ron_Zacapa_Centenario" target="new">Ron Zacapa 23</a> from Guatemala, a rum that's fantastic by itself. High in the mountains, Ron Zacapa is aged in a <a href="http://en.wikipedia.org/wiki/Solera" target="new">solera</a> process, which is a blend of rums. This process originated with the making of Sherry in Spain. They use organic Washington State grains in both of the spirits they produce. This premium vodka has a delightfully smooth taste, with a creamy mouth feel and hints of butterscotch, vanilla and almond on the nose. Bottled at 80 proof this creates a lot of room for mixability in a drink. Sometime in 2011 Woodinville Whiskey Co. will release a barrel-aged whiskey, which is resting in the rafters of the facility right now.<br /><br />I'm looking forward to incorporating these spirits in the new Daniel's Broiler cocktails this spring.
